Today's Clark Howard Show

Every year for the past 11 years, I've filled in for Clark Howard on the day before Thanksgiving and on Black Friday, the day after Thanksgiving. We always have a lot of fun on these shows.

Traditionally, I talk about the Thanksgiving I'm going to cook and provide recipes for everyone. If you're interested in my Thanksgiving Turkey Recipe, you can find it here.

We also talk about strategy for Black Friday -- this year, I think it'll still be Red Friday, since there are very few retailers (other than Wal-Mart) that are having a good holiday season thus far. The trees and tinsel may be up, but people are holding fast to their wallets, waiting for the great deals.

Which may be here. Today, we'll go over strategies for holidays, and ask these simple questions: Are you spending more or less his holiday season? And if you're spending the same amount, are you allocating it in different ways?

Yesterday, the Federal Government announced it would spend $800 billion to shore up consumer financees, including $600 billion to buy the debt or mortgage-backed assets of Fannie Mae and Freddie Mac. The initial boost: Mortgage interest rates dropped nearly a full percentage point in overnight trading. Is NOW a good time to refinance? We'll talk about that on the show as well.

Melamine was found in some baby formulas -- we'll give you the scoop on that -- and I'll talk about my latest videos featuring cool, new and inexpensive gadgets you may want to give to someone this holiday season.

Another Helping: Ilyce's Turkey Recipe

Back by popular demand, here's my turkey recipe for Thanksgiving:


ILYCE'S TURKEY RECIPE

The secret to making a great turkey is the margine/olive oil and herb mash I make and then spread all over the bird (and under the skin). Here's what I put in it:.

2-3 sticks of margerine plus olive oil (to loosen it)
Piles of fresh herbs: sage, rosemary, thyme, oregano, chives (whatever looks good that day; parsley works also, sage is nice, etc.)
6-8 cloves of garlic, peeled
seasoned salt
pepper
2-3 lemons, cut in half (you can juice the lemons if you want and add them to the mash in the Cuisinart).
Turkey Stock
Orange juice

Put all of these ingredients (except the lemon) into a Cuisinart and puree until smooth and faintly green (from the herbs). If you like, squeeze in some of the lemon juice to help smooth it out or add some of the lemon zest.

Loosen the turkey skin and spread the mixture underneath the skin, all over and in the cavity. Reserve any extra mixture to saute veggies for the stuffing.

Put the lemon halves inside the cavity. Turn the bird upside down and roast covered at 375F for the first 2 hours. Then, flip the bird, take off the tinfoil and continue to roast at 350F until done. Baste every half hour with turkey stock mixed with orange juice for a lovely golden color.

When you're done, deglaze the pan with some white wine. Dump all the liquid (scraping up the browned bits) into a big pot, defat the liquid and add a ton of mushrooms (I use a mix of wild/ordinary). Once it boils to concentrate, use this as your mushroom gravy.

It took 3 1/2 hours for my 20-pound bird to cook. Please note: I don't stuff the bird. I use turkey stock when making the stuffing on the stove, and then bake it separately. It tastes great!

Crystal's Mom's Potato Pancake Recipe

I have a ton of mashed potatoes leftover from last night's Christmas supper. My kids love potato pancakes, so Crystal Wheeler, who produced and screened calls today for the Clark Howard Show, called her mom for her recipe.

Crystal's Mom's Mashed Potato Pancake Recipe:

beat an egg and add that to the leftover mashed potatoes. Add a little bit of flour and salt and pepper to taste. Make the potato pancake patties and then coat the pancake in a little more flour on each side before frying them up in a little bit of oil. (I'm going to use olive oil.)

Crystal swears by them. I'll let you know tomorrow how they are.

A Christmas Recipe for ThinkGlink.com Visitors

My Thanksgiving recipe for Turkey http://www.thinkglink.com/blog/2006_11_24_archive.html was such a big hit, that I decided I'd post the recipe I plan to use for Christmas day.

I walked into Costco yesterday trying to decide what I wanted to make for Christmas Dinner, a time that we celebrate with close friends. They had a freezer full of standing rib roasts, something I loved as a child -- and something I haven't made in years and years.
